Creamy Polenta (Microwave or Stove) Recipe
| 2-1/2 c Water 1/2 c Yellow cornmeal 1/2 ts Salt 2 tb Grated Parmesan cheese 1 ts Olive oil 1/8 ts Black pepper |

Stir together the water, cornmeal, and salt in a microwave-safe 1-quart measure. Microcook, uncovered, on HIGH for 5 minutes. Whisk well. Cover with waxed paper. Microcook on HIGH for an additional 5 minutes. Add the Parmesan, oil, and pepper; whisk until smooth.
Spoon onto plates to serve. STOVE: Place water, salt, and oil in a 2-quart saucepan and bring to boiling. Gradually whisk in the cornmeal. Boil gently, stirring constantly, for 3 minutes. Stir in the Parmesan and pepper. Makes 4 servings.
Crab Melt Sandwich Recipe
| 2 Slices rye bread/sandwich 2 Slices swiss cheese per-sandwich 8 oz Crab meat, flaked 6 tb Chopped green onion 1/4 c Mayonnaise 1/8 ts Hot pepper sauce |

Butter one side of each piece of bread. This will be the outside of the sandwich. On the unbuttered side place a slice of cheese on each slice of bread. Combine remaining ingredients. Top one slice with crabmeat filling. Close to make a sandwich. On a non-stick pan grill the sandwich butter side to pan. Brown slightly on each side and cook until cheese is melted. Serve hot.
